INGREDIENTS
  • 1 cup flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1/2 cup milk
  • 1/2 cup water
INSTRUCTIONS

Mix flour,baking powder and salt together. Add milk and water slowly and beat until batter is smooth. Dip fish or chicken into batter, let excess drip off. Deep fry. The fish batter recipe is ready to serve...enjoy !

INGREDIENTS
  • 1 cup crushed saltines
  • 1 cup cornmeal
  • 2 tablespoons paprika
  • 5 teaspoons seafood seasoning
  • 2 teaspoons salt
  • 1 1/2 teaspoon pepper
INSTRUCTIONS
Combine and seal in a large resealable plastic bag. Store in a cool dry place for up to 6 months.
To prepare fish: For 1 pound fillets, place 1/3 cup coating in a shallow bowl; coat both sides of the fillets. Place in a greased 13- in. x 9-in. x 2-in. baking dish. Bake, uncovered, at 400 degrees for

INGREDIENTS

* 1/3 cup plus 2 tablespoons all purpose flour
* 1/2 teaspoon salt
* 1/4 teaspoon ground black pepper
* 1/3 cup flat beer
* Vegetable oil (for frying)
* 2 4- to 6-ounce catfish fillets
* 2 cups purchased coleslaw mix
* 2 tablespoons white wine vinegar
* 1 1/2 tablespoons honey
* 1 tablespoon vegetable oil

INSTRUCTIONS

Whisk 1/3 cup flour, salt, and pepper in medium bowl to blend. Whisk in beer.Add enough oil to heavy large skillet to reach depth of 1/2 inch.
Heat oil to 350°F. Place remaining 2 tablespoons flour on plate. Coat fish with flour. Dip in batter, letting excess drip off. Fry fish until golden brown and crisp, about 4 minutes per side. Drain fish on paper towels.
Toss coleslaw mix, vinegar, honey, and 1 tablespoon oil in medium bowl. Season with salt and pepper. Divide between plates. Place fish atop coleslaw. The fish batter recipe of catfish is ready to serve....great taste !

  • 1 c Bisquick
  • 1/4 ts Pepper
  • 1/3 c Corn meal
  • 4 -6 oz of beer
  • 1 ts Salt
  • 2 lb Of fish fillets
INSTRUCTIONS
Combine dry ingredients and add beer to get a sticky consistency for dipping. Salt fish and dip in batter. Deep fry at 375 degrees until fish is golden brown. Note: Fillets of most fish including striped bass, flounder, catfish, walleye, white bass, black bass, snapper, red fish, grouper, and white perch will work. The fish batter recipe is ready....

San Felipe-Style Fish Tacos in Beer Batter Recipe

INGREDIENTS
  • 2 lb Firm-fleshed fish fillets
  • SALSA BLANCA
  • 1/2 c Unbleached flour
  • 1/2 c Mayonnaise
  • 2 Eggs; separated
  • 1/2 c Plain yogurt; or sour cream
  • 1/2 ts Garlic salt
  • 1/2 ts Salt
  • 1 ts Oregano
  • 1 3/4 c Shredded cabbage; Napa
  • 1/2 ts Black pepper
  • ROSARITO BEACH SALSA
  • 1/4 ts Cayenne pepper
  • 1/2 c Oil
  • 3/4 c Beer; room temperature
  • 10 Chiles de arbol
  • 3/4 c Unbleached flour
  • 2 Tomatoes
  • 2 c Canola oil
  • 1/2 c Tomato sauce; canned
  • 18 Fresh corn tortillas
  • 1/2 ts Salt
INSTRUCTIONS
Cut fish into strips about 2 inches wide and 3 inches long. Roll in the 1/2 cup flour, dust off excess. Set aside while mixing batter.
Beat together egg yolks, seasonings, beer and the 3/4 cup flour until well blended. Whisk egg whites until they resemble soft whipped cream, then fold gently into batter. Set aside. This batter holds up quite well for up to 1 hour. Heat oil in flat-bottomed wok or cast iron skillet. Dip floured fish pieces in the beer batter and carefully slip into hot oil. Fry unto fish turns a deep gold, turning so it browns evenly. Remove to crumpled paper towels to drain. Warm corn tortillas on a griddle placed next to wok or skillet. (Or in oven.) For the salsa blanca: Blend mayonnaise, yogurt and salt. Makes 1 cup. For the Rosarito salsa: Heat oil in a small cast iron pan and fry the chilies in in it until they are a deep burnished red.
This step gives the salsa an incomparable smoky flavor. Remove to paper towels and blot off oil. While the chilies are cooling, broil the tomatoes about 5 minutes, turning once. Remove cores and most of the skin. Stem chilies and break pods into pieces. Place tomatoes, tomato sauce, salt and chilies in the bowl of a food processor: process until chilies are broken up into small, dark flecks. Use for tacos and over eggs. Makes 1 cup. Spread a scant tablespoon of Salsa Blanca over warm tortilla, add a heaping tablespoon of shredded cabbage and press into sauce. Add 2 or 3 chunks of fried fish and drizzle with Rosarito Beach Salsa.
